Hey Chef! This is Kami Nugent. I have been experimenting with Stevia most recently. It was one of the sweeteners we discussed in nutrition class this week. That stuff packs a punch of sweetness for such a small amount. One small individual packet for my coffee made my coffee much sweeter than I prefer it to be. There might have been 1/8 to 1/4 of a teaspoon in that packet. That went into about 12oz of coffee with milk. I'm going to try it in muffins this week and see how that comes out. I'm not sure if I can stand it regularly or not. I'm still trying to get over the aftertaste. I'm trying to cut down on my sugar intake starting with my coffee. I think that aside from caffine I eat way too much sugar. This Stevia is really strong stuff and I can't belive that it comes from a plant. It does not taste like a plant. I really like Agave Nectar as a sweetener but it has I think maybe more calories or just as much as sugar. It has a low glycemic index though and it's really yummy in coffee and smoothies. Aside from homemade Macaroni and Cheese which I love much better than that junk by kraft in a box that's all I have been cooking and experimenting with as of late. I'll let you know what those muffins taste like. Later!
