EXECUTIVE SUMMARY 
 The M’s Restaurant and Bar is Global Fusion Cuisine concept that serves small plates with bold flavors in fashionable décor with an upbeat atmosphere to attract Millennials.  The restaurant will be a gathering place, recognized as place where patrons are looking for quality food, uniquely presented, served at reasonable prices in a fashionable setting. 
Located in the growing northern suburbs of Pittsburgh at 701 Warrendale Drive, Warrendale, PA 15086
The food of this restaurant will drive the experience. Chef Mark’s and Chef Marlena’s creative inspired menus will be driven by quality sustainable ingredients, gathered locally and globally by our culinary team to deliver our unique form Global Fusion food.  For the “love of food” the team will provide diverse selections of small plates, with bold flavors that will satiety the palate which will have guest looking for more.
 The staff will be knowledgeable, friendly, and attentive to our customer’s needs in an upbeat atmosphere. M’s will produce; Guacamole made table side, gourmet tacos,  Fire baked flat breads, gourmet pizzas, sushi, maki, and specialty rolls.  Asian noodles and classic American pastas in flavorful sauces and broths, specialty salads and organic vegetables, wood fired grilled meats and seafood, oven roasted vegetables.  Each meal will finish with three (3) dollar priced gourmet pastries and confections served on our custom taster plate.  This is the perfect finishing touch to memorable experiences at M’s.
Quality food, uniquely presented, using our proven service excellent model will be the cornerstone of our restaurant’s culture: The culture behavior model is based on five steps of service excellence that has successfully been used in the top restaurants and resorts in the world that include the Ritz Carlton and Walt Disney World Resorts and Restaurants: These service steps are: Enter; Inquire; Exceed; Exit and Follow. They will be the foundation of our culture. This program has been written and designed to achieve excellence service with trainable measurable behaviors. All staff will be “on stage” and model behaviors that deliver this experience, that will lead to happy customers and happy staff and a livable business.  
Patrons will experience a community culture. This will include educational happy hour cooking demos, wine tastings and food pairings, and specialty bar drinks that will always keep things fresh and promote the restaurant as a ‘gathering place”  for the Pittsburgh community. Our demographics are the Millennials, 30-55 singles, DINK and empty nesters and couples that are looking for place to be seen. The local area is home to a 38,000 upscale single family homes, luxury apartments and condos. Our restaurant and bar will serve this community.
The executive team that will lead this restaurant has combine 60 plus years of prestigious working experience nationally and locally. 
Ronald A. Sofranko,  Principal of SOFRANKO ADVISORY GROUP, LLC an advisement firm that specializes in strategic business planning , finance, mergers, acquisitions, hospitality, real estate and franchising for all types of businesses. In his 26 year career Mr. Sofranko has owned 24 restaurants and opened over 90 and has raised over 100 Million dollars in equity and leasing in the Hospitality Industry in 3 states.  Sofranko has employed over 5000 employees in his career, over 160 chefs and over 320 managers.  SAG primarily engages companies that range in size from startup to $20 million in revenue with a specialty in the Hospitality industry.  Throughout our network we are continuously reviewing new business opportunities every year to further enhance our business portfolio.  SAG limits consulting client’s engagements to only 12 per year to provide personalized attention to individual CEO’s, Presidents and Owner’s.  Our goal is to analyze, review all existing operations, financings, marketing and human resources in reaching their goals. 
Mark Mattern has more than 29 years of culinary, beverage, management, research & development and analytical/financial experience in some of the finest hospitality, attraction and culinary establishments in the United States that includes Walt Disney World Resorts. Well-known throughout several industries as both a creative and analytical thinker, he is adept at conceptualizing, marketing and fulfilling innovative and financially successful short and long-term programs and procedures, for both internal and externally advantageous results.  A Culinary Institute of America (CIA) graduate, as well as a Stetson University EMBA graduate he has served in many leading capacities and is a respected consultant in culinary circles, food and beverage operations and marketing. Mattern served at the Orlando Culinary Academy as the Director of Education of the prestigious Le Condon Bleu Program, overseeing the academic and educational initiatives for 42 faculty, and nearly 800 students. Mattern served as the Academic Director of the International Culinary School at the Art Institute of Jacksonville, which serves the Jacksonville community. Today, he is the owner of M&M Enterprises, Inc and is the Program Director for Hospitality at Butler Community College. His family has 0wned Youngworld, Inc Children Center in Pittsburgh, PA for the past 35 years. 
Our capitalization consists $ 50,00o primary owner’s equity and extensive knowledge and experience in the industry along with $75,000 investor capital. The bank financed, purchase of assets, liquor licenses, capital improvements, inventory, start up cash for operational costs and training is approximant $700,000.
Careful and conservative projections anticipate a first year net profit of $150,000 on sales of $2.2 million. It should be noted that the first year P/L reflects certain initial sales promotional activities that during that period, are expected to yield long-term results and may reduce our initial first year returns. 
Mission Statement
The M’s Restaurant and Bar fired by Wood Burning ovens will provide crav-able Tapas-style small plates meet big both flavors of the global cuisine in chic place for locals to come and gather for relaxation, striving to be the bar and restaurant of choice for the locals in the suburban North Pittsburgh. Our concept will serve Global Fusion Cuisine of small plates with bold flavors in fashionable décor with an upbeat atmosphere playing custom music mixes. Our restaurant will be is recognized as place where patrons are looking for quality food presented uniquely, served in a fashionable setting at reasonable prices.
 

Guiding Principles
The M’s fusion philosophy is simple: celebrate local sustainable ingredients with small plates and bold flavors served by knowledge chefs and staff that enjoy’ s life and treat others as family. These sound principles apply are based on the service excellences model that will apply to all life’s situations, both personal and professional. At M’s , these principles are applied to management, employees, customers and suppliers alike.
Life is to be enjoyed! M’s employees love their jobs and their customers! This is not only reflected in the outstanding service – it is because management personally culls, tests, and trains each employee putting them in the position that is ideally suited for them.
Integrity – In the spirit of all great bartenders, treat each customer with utmost respect and professionalism. The bartenders and wait staff are trained to act professionally in all situations. If a regular patron happens to become disorderly say after a particularly stressful day, our family and staff are trained to promptly and discreetly order a cab for these individuals. No one wants to work with drunken and disorderly individuals and the patrons do not want to be known as such either.

Keys to Success
The M’s key to success will be based on:
Enter: Greet our patrons as family. When within 10 feet we give eye-contact and within 5 feet we speak. 
Inquire: We speak first and last, assuring our guest that we know what their expectations are.
Exceed: Quality local sustainable ingredients from local vendors, prepared using sound techniques, served by professionals using the service excellences model, from the chefs, service staff and bartenders all served in a “chic” upscale atmosphere.
Exit: The guest experience is only complete when closure is done correctly. This starts with our service staff. Fact: when guests are thanked for coming to an restaurant establishment they are 90% more likely to return to the establishment. This is according to a survey done annually by the National Restaurant Association. We always thank our guests for coming to our restaurant.
Follow up: Remember (database) our guests and follow up on each experience, table by table. Management will table touch each table during a shift and follow up on all experiences to ensure happiness.
Company Description
M’s Restaurant is locally owned restaurant bar equally owned and operated by Mark Mattern and Ronald Sofranko. M’s Global Gathering will occupy a 4,200 square foot facility located in a Warrendale Square shopping center. The property address is 701 Warrendale drive, Warrendale, PA 15086
M’s will provide a vibrant, high-energy dj driven music, chic environment for its patrons. The furnishings are comprised of leather appointed bar chairs and lounge chairs in the bar and circle large booths and 4 top tables in the dining room. Many of these items are existing in the present restaurant or will be upgraded to lend eclectic look to the cocktail lounge area. The walls are adorned with a collection of food and market images and artist from the local area.
The kitchen is at the center of the restaurant and central to our vision. Quality sustainable fresh food produced by well-trained culinary and service staff professionals will drive our customer experience. Our guest will see the “magic happen” as the food is orchestrated from our market drive kitchen to our guests.
